Apple Pie Quinoa Bowl Recipe
A healthy twist on an old time favorite, this apple pie quinoa bowl will cure any cravings you have for the classic treat!
In a microwave safe bowl, add the Trifecta quinoa, almond milk, and applesauce. Mix together. Microwave mixture for 2 minutes and stir to make sure the consistency is good.
If the quinoa needs a little more time to absorb the milk, put back in the microwave for an additional minute, or until it thickens. Once desired consistency is reached, add vanilla extract, apple pie spice, and cinnamon to the quinoa.
In a separate bowl, dice half of a medium sized apple and add the pecans. Add cinnamon. Mix.
Top the quinoa with the apple/ pecan mixture. Add a scoop of Enlightened Vanilla Ice Cream if desired. (If you would like to enjoy this without the ice cream, subtract 60 calories from the total nutrition information listed below)
