The trick to meal prepping proteins is to slightly undercook them. Especially with burgers, it is relatively safe to cook your patties to 135 to 140F degrees, leaving a slight pink meat trace in the center of the burger. This ensures a cushion of sorts for when you are reheating the patties if you meal prep a few of these ahead of time.

Use Quality Beef - Choose a high quality ground beef (like ground chuck, ribeye, and brisket or short rib - in no particular order), grind it yourself or use one of our Trifecta A La Carte bison burger patties or beef burger patties!
Keep it Cold - Unlike steaks and roasts, keeping the burger meat cold will ensure the small amount of fat present in the burger slowly melts as it cooks. Slow fat release equals tons of flavor.
Make a Dent - When forming a raw patty, use your thumb to press a dimple into the middle about 1 inch to 2 inch thick in diameter.
Leave it Alone - The best way to cook a burger is to put it on a grill or a pan/flat top and leave it alone, while flipping it once. Don’t forget to season with salt and pepper.
Melt the Cheese and Let it Rest - If adding a slice of cheese, which we suggest for further added fat in this instance, add the cheese of your choice about a minute before the burger is cooked. Let rest the meat before serving and enjoy!

How To Make a Keto Burger
Prep time: 15 minutes
Cook time: 10 minutes
- 3 Trifecta bison burger
- 3/4 cup yellow onion, sliced, caramelized
- 6 tomato slices, sliced thinly
- 3 Boston bib lettuce leaves, washed, separated
- 3 bacon strips, crispy, halved
- 3 tablespoon chipotle mayo (see below)
- 3/4 avocado, sliced
- Avocado oil or regular olive oil
- Kosher salt to taste
- Cutting board and chef's knife
- Saute pan
- Small bowls for mixing
- Meal prep containers
For the chipotle mayo: Mix 3 tablespoons of mayo, 1 tablespoon of chipotle in adobo pureed, 1 teaspoon of lime juice, and 1 teaspoon of garlic powder.
Step One: Caramelize Onions and Bake Bacon
Preheat the oven to 400F.
This step is crucial, as the caramelized onions give this burger its very unique flavor.
Cut one end of the onion, leaving the root (aka core) untouched, peel the onion, half it, and cut it lengthwise evenly, from the right side of the onion to the left. Transfer to a bowl and hold. Repeat the process with the second half of the onion.
Add a splash of avocado oil to a non-stick pan. Heat over medium-high heat until slightly smoking, and add onions. Sauté adjusting heat to avoid charring to medium-low. And add a splash of water. Mix the onions.
Adding water will help caramelize the onions. Repeat this process as the onions caramelize and become cooked. Once deep in caramel color, season with kosher salt, transfer to a bowl and hold warm until needed, or cool down completely if meal prepping.
Meawhile, line a sheet pan with foil. Set 3 bacon strips on the sheet pan and bake for 7-10 minutes as your onions are cooking. For further instructions, find out how to meal prep bacon like a chef here.
Step Two: Reheat or Cook Burger and Prep Ingredients
If you are using Trifecta A La Carte: 5 minutes out from your onions being done, reheat your bison burgers by either microwaving them covered with a damp paper cloth for 2 minutes, or in an air fryer or oven, 5-7 minutes. Conversely, you can also sear your low carb burgers on a cast iron skillet.
If you are cooking your burgers from scratch: Follow the steps as explained above. Cook your patties on your preferred cooking method - whether grilled, seared, or baked, until the internal temperature reaches 135F to 140F, 4-6 minutes.
While this happens, get your lettuce, tomato, avocado slices, and chipotle mayo ready. Hit the tomato and avocado with a pinch of kosher salt.
Step Three: Put it all Together
Place a Boston bib lettuce leaf as the bottom 'bun'. Add 2 slices of tomatoes, add your cooked bison patty, 1 tablespoon of chipotle aioli, add 1/4 cup caramelized onions, and 1/4 sliced avocado. Serve immediately or meal prep in containers and refrigerate.
