How To Properly Meal Prep Burgers
The trick to meal prepping proteins is to slightly undercook them. Especially with burgers, it is relatively safe to cook your patties to 135 to 140F degrees, leaving a slight pink meat trace in the center of the burger. This ensures a cushion of sorts for when you are reheating the patties if you meal prep a few of these ahead of time.

Ingredients:
- 3 Trifecta Bison burger
- 3/4 cup yellow onion, sliced, caramelized
- 6 tomato slices, sliced thinly
- 3 Boston bib lettuce leafs, washed, separated
- 3 bacon strip, crispy, halved
- 3 Tbsp. chipotle mayo (see below)
- 3/4 avocado, sliced
- Avocado oil
Kitchen Needs:
- Cutting board and chef's knife
- Saute pan
- Small mixing bowls
- Meal prep containers
Step One: Caramelize Onions and Bake Bacon
Preheat the oven to 375F.
This step is crucial, as the caramelized onions give this burger it's very unique flavor.
Cut one end, leave the root (aka core) untouched, peel the onion, half it, and cut it lengthwise evenly, from the right side of the onion, to the left. Transfer to a bowl and hold. Repeat with the other side of the onion.
Add a splash of avocado oil to a non-stick pan. Heat over medium-high heat until slightly smoking, and add onions. Sauté adjusting heat to avoid charring. Reduce heat to medium-low, and add a splash of water. Mix the onions. Adding water will help caramelize the onions. Repeat this process as the onions caramelize and become cooked. Once deep in caramel color, season with kosher salt, transfer to a bowl and hold warm until needed, or cool down completely if meal prepping.

Step Two: Reheat Burger and Prep Ingredients
If you are using Trifecta A La Carte: 5 minutes out from your onions being done, reheat your bison burgers by either microwaving them covered with a damp paper cloth for 2 minutes, or in an air fryer or oven, 5-7 minutes.
If you are cooking your burgers from scratch: Mold them round and flat like a burger and press the middle of the patty, making a small crater. This will help the burger cook evenly (nifty little trick). Cook your patties on your preferred cooking method - whether grilled, seared, or baked, until the internal temperature reaches 135F to 140F, 5-8 minutes.
While this happens, get your lettuce, tomato, avocado slices, and chipotle mayo ready. Hit the tomato and avocado with a pinch of kosher salt.
For the chipotle mayo: mix 3 tablespoons of mayo, 1 tablespoon of chipotle in adobo pureed, 1 teaspoon of lime juice, and 1 teaspoon of garlic powder.
Step Three: Put it all Together
Place a Boston bib lettuce leaf as the bottom 'bun'. Add 2 slices of tomatoes, add your cooked bison patty, 1 tablespoon of chipotle aioli, add 1/4 cup caramelized onions, and 1/4 sliced avocado. Serve immediately or meal prep in containers and refrigerate.
