How to Make this Recipe

Even though it eats like a dessert, there is little added sugar in this recipe. Fruit preserves and frozen blueberries substitute as a natural sweetener, bring a ton of nutritional value along with it.

While fresh fruit works fine, frozen fruit creates a juicier, richer tasting berry when warmed to room temperature. When thawed the blueberry juices will start to run and when combined with preserves, you've got yourself a 100% fruit based "compote" that will take your yogurt parfait u a few notches. 

And why stop there? Instead of just settling for any granola, add some serious protein oomph using hemp hearts. 

Perfect for meal prep! Just multiple by as many servings as you see fit and keep in the fridge for up to a week. 

Ingredients

To meal prep a single serving of this recipe, you'll need the following ingredients: 

  • 1 cup non-fat Greek yogurt (I used Fage)
  • 1/4 cup Frozen blueberries, thawed
  • 1 tbsp blueberry fruit preserves (no sugar added)
  • 2 tablespoons hemp hearts
  • 3 tablespoons low sugar granola

Optional: add a 1/2 scoop of protein powder for even more sweetness and protein. 

Instructions

Start by creating your blueberry compote.

Warm frozen blueberries in the microwave or set on a countertop at room temperature until they produce a small amount of juice. Then combine with preserves, setting aside a few berries for topping.

Then mix your high protein granola by combining hemp hearts and granola cereal.

Then build your parfait! Layer berry mixture on the bottom of the serving jar, followed by alternating layers of the granola mixture and yogurt.

Top with blueberries and granola mixture to garnish.

Store in the fridge until ready to enjoy!
