Perfect for a refreshing lunch, this sweet and spicy thai shrimp noodle bowl is a delicious healthy recipe to add to your week! Ingredients

For The Sauce:

  • 4 Tbsp Thai Sweet Chili Sauce
  • 2 tsp Fish Sauce
  • 2 Tbsp Water
  • 2 Tbsp Lime Juice

For The Bowl:

  • 6 oz Brown Rice Vermicelli Noodles
  • 1 lb Trifecta Shrimp
  • 1 Cup of Shredded Carrots
  • 1 Cup of Cucumbers (sliced and cut in quarters)
  • Cilantro for taste
  • 1/2 Cup of Unsalted Roasted Peanuts
  • 2 Cups of Butter Lettuce

Instructions

  1. First, mix all of the ingredients for the sauce together in a small bowl.
  2. Then, using a skillet, add your Trifecta shrimp and grill until lightly golden.
  3. When the shrimp is heated appropriately, add the sauce to the skillet.
  4. In a pot, bring water to a boil and add the brown rice vermicelli noodles. Cook until noodles are soft (these cook very fast so be careful!)
  5. Add the cooked noodles to a bowl, then top with shrimp, butter lettuce, carrots, cucumbers, and cilantro.
  6. Chop or crush peanuts. Add these peanuts to the top of your bowl.
