This recipe uses the famous keto cauliflower rice, for an easy low carb keto dinner recipe. Feel free to add any spice mix like 2 tsp of turmeric, 1 tsp chinese five spice, and 1 tsp smoked paprika.

Description

This easy keto fried cauliflower rice recipe is also gluten free. And the chicken can be substituted with tofu for a quick vegetarian option. Feel free to add any vegetables from our A La Carte menu!

Ingredients

  • 4.5 oz Trifecta Chicken Breasts, diced
  • 2 large Trifecta Eggs, rough chop
  • 1/2 Medium Cauliflower head, processed
  • 2 Garlic Cloves, rough chop
  • 1/2 Tsp of Salt
  • 2 Stalks, green onion, sliced into rounds, green and white separated
  • 1 Tbsp. Tamari (GF Soy Sauce)
  • 1 Tbsp. Sesame Oil
  • 1 Tsp. Black Sesame Seeds
  • 1/2 Avocado, medium

Salt and Pepper, to taste

Instructions

  1. Prepare the Cauliflower rice by cutting the Cauliflower into florets and processing in food processor until a grainy texture is achieved. Pulse for best results. Be careful not to process for too long, or the cauliflower will turn into a puree.
  2. Chop trifecta chicken breast into bite size squares, maintaining an even cut to ensure even heating. Set aside. Rough chop trifecta eggs to add to rice later on.
  3. Heat 1 tbsp. of sesame oil in a pan and sauté the processed cauliflower. Season with salt and pepper to desired taste. Set aside and keep warm.
  4. In same pan, over medium-high heat, heat-up the remaining 1 tbsp. of sesame oil, and sauce garlic cloves, white bulb of green onions. Season with salt.
  5. Deglaze pan with tamari, and immediately add diced chicken, warm cauliflower rice, and eggs. Sauté until heated through.
  6. Serve on two plates. Top with black sesame seeds, green onions, and 1/4 avocado for each plate.
