Quick Shredded Chicken Sliders Recipe

Sliders are such a great invention - you can satisfy your craving for sandwiches while portioning the quantity of bread you eat to a smaller amount Talk about a win-win.

I created this recipe at the Trifecta's HQ office kitchen - not our test kitchen, but rather the top floor office kitchen. I looked at the fridge, saw the ingredients we had, pulled one Trifecta chicken breast, and smothered the chicken-salad-like concoction in between two slider bread. Why do I share that with you? Well because, if a person using a very limited kitchen space can make this recipe, you can too at home!

DESCRIPTION

This recipe is incredibly functional - you can ignore the slider bun portion and create a keto-like chicken salad, or you can make it as is, or toss the chicken with your favorite grain, or even change the chicken for turkey or tuna... Have fun making this recipe and using it as a guideline! Pair it with your favorite chips or Trifecta veggies for a complete meal!

INGREDIENTS

  • 8 slider buns
  • 8 ounce Trifecta pulled chicken
  • ¼ cup mayo
  • ¼ cup Greek Yogurt
  • 2 teaspoon olive oil
  • 1 tablespoon dijon mustard
  • 2 teaspoons honey
  • 3-4 dashes Tabasco
  • 2 teaspoon lime juice
  • 1 teaspoon minced garlic, fresh
  • 2 teaspoon paprika
  • Pinch Black pepper
  • 1.5 cup favorite Trifecta veggies

INSTRUCTIONS

  1. Transfer the pulled chicken from the Trifecta tray to a bowl big enough to comfortably hold the chicken and be able to mix it all.

  2. Add all ingredients except the vegetables into the same bowl with the chicken. Mix with hands (preferably wearing gloves) until chicken and ingredients are fully incorporated. Taste for seasoning and add salt if needed. Keep on the side until needed.

  3. Toast buns until golden brown. Meanwhile, reheat your favorite Trifecta veggies in a microwave-safe bowl.

  4. Plate 1 ounce of chicken per slider, top with minced chives or scallions, and place the top slider bun on top of the chicken mix. Plate ½ cup of vegetables next to the sliders and enjoy a delicious quick meal.

  • Use light mayo and 2% Greek yogurt to match the calories in the recipe card.
