Fast Chicken Shawarma with Sweet Potato Recipe

Even though Shawarma is originally made of lamb mutton, and sliced off as it rotates, this dish imitates this Middle Eastern favorite by using Trifecta's chicken breast

Fast Chicken Shawarma & Sweet Potato

DESCRIPTION

This one-two-three recipe makes an incredibly rich and delicious quick meal any day. Feel free to serve this with rice instead of sweet potato, and add as much sauce as you desire to your plate.

INGREDIENTS

  • 16 ounce Trifecta Chicken Breast
  • 1.5 cups Trifecta broccoli
  • 1.5 cups Trifecta sweet potato mash
  • Shawarma spice rub (see recipe below)
  • Garnish, optional: Greek-lemon yogurt and chopped fresh parsley
  • Shwarma Wet Rub:

  • 1 tablespoon greek yogurt (plain)
  • ⅓ cup lemon juice
  • ¼ cup apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon avocado oil
  • ½ teaspoon of the following: ground garlic, ground cumin, ground caraway, ground cardamom, ground ginger, paprika, ground cinnamon, and black pepper
  • ¼ teaspoon cayenne pepper

INSTRUCTIONS

  1. Mix the Shawarma wet rub ingredients in a bowl. The consistency should be a paste

  2. Dice the chicken into bite-size squares, as even as possible. Add diced chicken into the bowl with the spice paste. Mix to coat evenly.

  3. Heat up a non-stick pan over medium heat, and spray to coat with spray oil. Add the chicken and heat for 2-3 minutes. Taste to make sure chicken is heated through. Turn off heat and keep warm until needed.

  4. Warm-up both sweet potato mash and broccoli in separate bowls for 2.5 minutes in the microwave. Add 30 seconds if broccoli and sweet potato are not heated through. Keep warm until needed.

  5. Plate ½ cup of sweet potato, along with ½ cup of broccoli and 4 ounces of the chicken Shawarma. Garnish with greek-lemon yogurt and parsley if desired.
