Buffalo Chicken Meal Prep
Use this recipe as your guide to create amazing buffalo recipes that are healthy and delicious! Not a fan of butter? That's okay! Substitute it with coconut oil, and I can assure you you won't taste the difference.
Melt the butter in a medium saucepan over medium-low heat. Once fully melted, add the rest of the ingredients in the pot. Mix, taste, and adjust for seasoning if needed (unlikely as Frank’s is pretty salty as is). Bring to a gentle boil and let sauce slightly reduced.
Dice chicken into even bite-sized squares. Transfer chicken into pot with sauce and bring up to heat until chicken is fully heated through. Reduce heat to low and keep covered until needed. Stir every now and then if for some reason you keep the pot on the fire for longer than 5 minutes.
Meanwhile, heat up Trifecta mashed potato and cauliflower in two separate microwave-safe bowl for 3 minutes. Add 30 seconds if the food is not heated all the way through.
As an idea: Plate ½ cup of mashed potatoes in each plate, topped by 4 ounces of chicken buffalo and ½ cup of the heated cauliflower. Feel free to sprinkle any leftover buffalo sauce on the cauliflower.
