Buffalo Chicken Meal Prep Recipe

Buffalo sauce is easily one of the most diverse sauces out there. Find a multi-use from-scratch Buffalo sauce that can be used in many ways for your meal prep!

 

As you see from the pictures, I made this recipe using Trifecta chicken, with a side of Trifecta broccoli, but didn't necessarily suggest any sides. I did this because you can use this recipe as your meal prep guide for chicken buffalo in general, and then add it to other dishes as you please. 

I mean, go beyond your imagination barriers, use the backbone of this recipe as a guideline, and have tons of fun!

A few ways to try this:

  1. Make a buffalo flatbread with buffalo chicken, gorgonzola and arugula.
  2. Dress cauliflower in the buffalo sauce for a Keto side. You can also add 1/3 cup of coconut oil into the buffalo sauce to make it Keto.
  3. Make a buffalo dip with the sauce recipe below and some cheese.
  4. Eat the buffalo chicken with rice.
  5. Combine the buffalo sauce with Trifecta shredded chicken and make a delicious buffalo sandwich.

DESCRIPTION

Use this recipe as your guide to create amazing buffalo recipes that are healthy and delicious! Not a fan of butter? That's okay! Substitute it with coconut oil, and I can assure you you won't taste the difference.

INGREDIENTS

  • 16 ounce Trifecta Chicken, diced
  • ½ cup Frank’s Red Hot sauce
  • 1 tablespoon butter, unsalted, melted
  • 2 teaspoon apple cider vinegar
  • 1 tablespoon brown sugar
  • ½ teaspoon garlic
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper

INSTRUCTIONS

  1. Melt the butter in a medium saucepan over medium-low heat. Once fully melted, add the rest of the ingredients in the pot. Mix, taste, and adjust for seasoning if needed (unlikely as Frank’s is pretty salty as is). Bring to a gentle boil and let sauce slightly reduced.

  2. Dice chicken into even bite-sized squares. Transfer chicken into the pot with sauce and bring up to heat until chicken is fully heated through. Reduce heat to low and keep covered until needed. Stir every now and then if for some reason you keep the pot on the fire for longer than 5 minutes.

  3. Meanwhile, heat up Trifecta mashed potato and cauliflower in two separate microwave-safe bowls for 3 minutes. Add 30 seconds if the food is not heated all the way through.

  4. As an idea: Plate ½ cup of mashed potatoes in each plate, topped by 4 ounces of chicken buffalo and ½ cup of the heated cauliflower. Feel free to sprinkle any leftover buffalo sauce on the cauliflower.

  • As mentioned above, serve this recipe with your favorite starches and vegetables! The nutrition below represents only the chicken and buffalo sauce mix.
