You don't have to wait until fall to enjoy pumpkin flavored foods! Enjoy this delicious vegan, pumpkin pie chia pudding year round as a delicious breakfast or dessert! This pudding is full of flavor and sure to satisfy your sweet tooth! 

Ingredients

  • 3 cups unsweetened cashew milk
  • 1 ½ cup canned pumpkin
  • 1 tsp cinnamon
  • ½ tsp ginger
  • ½ tsp nutmeg
  • 2 tsp vanilla extract
  • ¼ tsp cloves
  • 6 tbsp of chia seeds
  • Optional: 3 Tbsp maple syrup or sweetener of choice

Instructions

  1. Mix milk, pumpkin and all spices in a large bowl until blended.
  2. Stir in chia seeds.
  3. Refrigerate overnight.
  4. Re-stir and portion out in the before serving. May take a few minutes to fully set once served.
