DESCRIPTION

A quick and easy recipe to make for the whole family (or for a week's worth of meal prep), these turkey stuffed bell peppers are too good to pass up!

INGREDIENTS

  • 2 Whole Bell Peppers (We used Red & Green)
  • 2 4oz Trifecta Turkey Burgers
  • 1/4 Red Onion (diced)
  • 1 Medium Tomato (diced)
  • 1/2 Cup of Panko Bread Crumbs
  • 1/2 Cup of Low Fat Shredded Cheddar Cheese
  • 1 Tsp Italian Seasoning
  • 1 Tsp of Ground Cumin
  • 1 Clove of Garlic
  • Salt & Pepper

INSTRUCTIONS

  1. Preheat oven to 325 degrees. Then, cut the bell peppers in half, remove seeds, and clean.

  2. In a large bowl, crumble the Trifecta turkey burgers and mix with the onions, bread crumbs, tomato, garlic, and other seasoning. Add half of the cheese to the bowl (save other half for the top). Add a dash of salt and pepper. Mix well together.

  3. Spray a baking sheet with non-stick cooking spray. Then add the bell pepper halves. Fill each bell pepper with the stuffing. Heat for 15-20 minutes.

  4. Remove from heat and add the rest of the cheese to the top of the peppers. Place back in the oven for 3-5 minutes or until cheese is melted.
