DESCRIPTION

Light and refreshing, this low-carb shrimp stuffed avocado recipe is absolutely delicious. Enjoy as a light entree or bring to a summer gathering as the perfect appetizer to share!

INGREDIENTS

  • 2 Medium Avocados
  • 6 oz of Trifecta Shrimp
  • 1 Roma Tomato
  • 1 Jalapeno
  • 1 oz of Bolthouse Farms Cilantro Avocado Dressing
  • Cilantro to top

INSTRUCTIONS

  1. First, cut both avocados in half and remove the pit. Using a spoon, cut out additional avocado in the center to make room for more shrimp.

  2. Heat up the Trifecta Shrimp for 2 minutes in the microwave.

  3. Cut up the shrimp into pieces and add into the center of the avocados. Top with diced Roma tomatoes, diced jalapenos, and drizzle lightly with the Bolthouse Farms dressing.

  4. Top with fresh cilantro. Enjoy!
