Description

A perfect recipe for an easy meal or appetizer this BBQ Chicken Sweet Potato Toast is sure to be a huge hit for any occasion!

Ingredients

  • 5 Small Sweet Potatoes
  • 4 4oz Trifecta Chicken Breasts
  • 1/2 Cup of Sugar-Free BBQ Sauce
  • 1 Red Onion
  • 1/2 Tsp of Salt
  • 2/3 Cup of Low Fat Mozzarella
  • 1/3 Cup of Fresh Cilantro

Instructions

  1. First, Heat the sweet potatoes up in the microwave for about 5 minutes (each potato).
  2. Using two forks try and shred the chicken up as much as possible. Also, dice the onions.
  3. In a bowl, mix together the chicken, onions, and BBQ Sauce.
  4. Once the potatoes have cooled. Cut into strips (hot dog style) to use as the base of the toast. Using a skillet, grill the sweet potatoes until golden brown. Add the mozzarella cheese to the top of the toast and let melt.
  5. Add the chicken/onion mixture to the top of the toast.
  6. Top with fresh cilantro. Enjoy!
