Baked Chicken Parmesan with Zucchini Pasta

This recipes is a great way to save some carbs and still enjoy a filling meal. Eat it as the main course and pair with a nice salad, it's sure to satisfy any foodie.

Baked Chicken Parmesan with Zucchini Pasta

Yield:Serves 2

Ingredients

  • 2, 4oz chicken breast
  • 1/4 teaspoon of salt
  • 1/4 cup of whole wheat bread crumbs
  • 2 tablespoons of grated parmesan cheese
  • 1 teaspoon of melted unsalted butter 
  • 1/2 tablespoon of olive oil
  • 1 1/2 cup of marinara sauce
  • 5 tablespoons low fat mozzarella cheese 
  • 2 zucchinis peeled
  • 1 tablespoon olive oil
  • 1/4 cup of water

Instructions

  1. Preheat oven to 450 degrees. Spray a baking sheet with cooking spray. Season both sides of the chicken breast with salt.
  2. In a small bowl mix the bread crumbs and parmesan.
  3. In another small bowl mix the butter and olive oil. Using a brush, brush the butter and olive oil mixture onto the chicken breasts. Then dip the chicken breast into the bread crumb mixture until fully seasoned. Put the chicken onto the baking sheet.
  4. Bake for about 20 minutes or until golden on the bottom of the chicken. Turn the chicken over and then cook for an additional 5-6 minutes or until the center is cooked.
  5. In a skillet, cook the marinara over medium. Then add in the chicken, place the mozzarella on top and cover skillet until the cheese melts.
  6. Cut lengthwise slices from zucchini. Turn zucchini over and continue peeling until all the zucchini is in long strips. Then cut those pieces into thinner, spaghetti like pieces.
  7. In a skillet, heat the olive oil over medium. Stir zucchini in the hot oil for 1 minute. Add water and cook for about 5-7 minutes or until softened. Once cooked, drain the liquids from the pan.
  8. Place the zucchini noodles on a plate as the base. Top with the chicken parmesan.
